Time for Chocolate

Chocolate Ssticks

150 g flour
250 g water
100 g butter
10 g Cacao Barry® cocoa powder Plein Arôme
4 whole eggs
30 g Cacao Barry® Cocoa Nibs
Salt

  1. Boil together water and butter in saucepan.
  2. Add flour and cocoa powder, and boil for 2 minutes until panade releases from pan bottom.
  3. Mix with stand mixer and gradually add eggs until completely absorbed.
  4. Pipe thin sticks and sprinkle with cocoa nibs and salt.
  5. Bake at 180°C for 15 minutes.

Prune Jam

180 g dried plums
50 g glucose
20 g Fruit'Purée Yuzu Capfruit
Vanilla bean
30 g Cointreau liquor
Juice of one orange
Cinnamon stick
100 g water

  1. Boil together all ingredients and reduce.
  2. Remove vanilla bean and cinnamon stick.
  3. Blend and pass through sieve.
  1. Boil together cream and invert sugar.
  2. Add chocolate and mix well.
  3. Add butter and hazelnut paste.
